Cashew Cabbage and Quinoa Salad

Salad

  • 2 cups cooked quinoa
  • 2 cups shredded red cabbage
  • 1 red pepper, diced
  • 1 cup of carrots, shredded
  • 1/4 cup diced red onions
  • 1/2 cup diced cilantro
  • 1/2 cup roasted cashews

Dressing

  • 1/4 cup natural peanut butter
  • 2 teaspoons freshly grated ginger
  • 3 Tablespoons soy sauce
  • 1 Tablespoon honey
  • 1 Tablespoon red wine vinegar
  • 2 teaspoons sesame oil

Instructions
Chop all salad ingredients and add to a bowl.

In a separate bowl mix the dressing ingredients and pour over salad.  Chill and serve.
