Honey Mustard Parsnips

  • 6-8 parsnips, peeled and quartered lengthways
  • 2 tbsp olive oil
  • 2 tbsp mustard seeds, brown or white
  • 2 tbsp clear honey



1. Cut any woody parts from the centre of the parsnips and discard. In a bowl whisk together the oil, mustard seeds, honey, salt and pepper.

2. Put the parsnips in a roasting tin, drizzle over the flavoured oil and toss together until they are evenly coated. Cook for 40-50 minutes.
