These tasty bivalves are grown on the surface in floating cages which allow us to have the longest growing season in Eastern Canada. It takes around 3 years for an oyster to reach maturity with this method but also gives them optimal conditions.

Once they reach market size, they are sunk down to 8-10 feet below the surface as it offers a cooler environment and slightly higher salinity. They are kept at that depth for 21 days for conditioning.

The brackish waters of Eel Lake gives the oysters a sheltered environment that boasts high nutrients. The mix of the ocean and fresh water rivers makes Eel Lake a very unique spot. One
of the only brackish areas in all of mainland Nova Scotia that offers a setting that oysters can thrive in.
