Ingredients: Ferme Rêveuse whole eggs, organic wheat flour, sea salt, water 

Swiss-Style Spaetzle

Serves 2-4

1 tbsp olive oil, plus more if needed
1 large onion, peeled and sliced thin
Salt to taste
1 package Ferme Rêveuse Spaetzle
4 pieces cooked bacon, crumbled (optional)
1 ½ cup shredded gruyere cheese

In a large skillet, heat olive oil over medium high heat. Add in sliced onions and saute until softened. Bring heat down to medium and, stirring occasionally, for 15-20 minutes or until a deep golden brown. This may require adjusting the temperature. Don’t forget to scrape the bottom of the pan. When the onions are done, lightly season with salt.

Preheat the oven to broil bringing up your oven rack to the slot near the top of the oven.

Stir in the spaetzle into the caramelized onions for 1-2 minutes, adding a little more olive oil if needed. Sprinkle over crumbled bacon if using and top with shredded cheese. Broil in oven for 2-3 minutes or until golden brown and cheese is melted.
