Pasta with Kale & Sausage

Enjoy a hearty and flavourful Italian-inspired Penne and Sausage recipe featuring tender kale, zesty Italian sausage, and a rich tomato base. Perfect for a comforting dinner!

1. Fill a large pot with 3 quarts of water and bring it to a boil. Once boiling, add 2 tablespoons of kosher salt (enough for the water to taste "like the sea"). Cook the penne according to the package directions, but reduce the cooking time by 1-2 minutes for a firmer texture. Reserve 1 cup of pasta water before draining.

2. Heat a Dutch oven or large pot over medium-high heat and add a tablespoon of oil. Sauté the chopped onions for 30 seconds, followed by the minced garlic for another 30 seconds. Remove the Italian sausage from its casings directly into the pot. Use a wooden spoon to break up the sausage and let it cook undisturbed until the bottom browns. Stir and repeat until evenly browned.

3. Stir in the tomato paste, ensuring it makes good contact with the pot's surface. Cook until it darkens and develops a deeper flavour.

4. Add the torn kale to the pot and season with a generous pinch of kosher salt. Stir well and allow the kale to cook down slightly.

5. Scoop the penne into the pot using a handheld colander, directly mixing it with the sausage and kale. Add reserved pasta water (about 2/3 cup) gradually, stirring to reach your preferred consistency. Cook for another 30 seconds or until the pasta reaches your desired doneness.

6. Plate the pasta and garnish with Italian red peperoncini in oil or sprinkle with dried chili flakes for extra heat. Enjoy this hearty, flavourful meal!
